As Mothers Day is approaching us why not treat Mum to a yummy breakfast in bed that the kids can make......
140g self raising flour
1 tbsp milk
Zest of 1 lemon
1 tbsp of desiccated coconut
Before you start wash your hands and put on an apron. Ask your grown up helper to switch the oven to 180c or Gas 4
Put the butter in a mixing bowl and beat with the sugar until its really soft and you cant see the sugar
Grate the lemon skin using a fine grater and then add to the butter & sugar
Slowly stir in the eggs and then mix in the flour & coconut until combined
Add the milk until the mixture just falls off the spoon and then carefully fold in the berries, trying not to break them up too much.
Put the muffin cases in your muffin tin and divide the mixture between them, smooth the tops and then sprinkle a few porridge oats on top.
Ask your grown up helper to put them in the oven for about 20 minutes until the muffins have risen and golden.
Sprinkle some icing sugar over the tops and serve to your mum with her favourite coffee or tea and a bunch of flowers
