Hi, so last week I shared with you easy packed lunch swaps, so if you are bored of the normal sandwiches, crisps and chocolate and would like some ideas that are healthy and all count towards your 5 a day, check this out in my blog!
Today I want to share with you a couple of recipes that can be made ahead of time, kept in the freezer and then just get them out that morning, by lunchtime they will be ready to eat and rather yummy and a good alternative to a sandwich! Not only that as you can make them ahead of time at the weekend it is a good opportunity to get your kids involved in making them. I firmly believe cooking is such an important life skill for children and the younger they start the better. Not only does it increases confidence it gives them the skills they need to fend for themselves when they are older. Children are more likely to try new foods if they have made it themselves as they are super proud of their creations.
So my first recipe I want to share with you is my Chicken, Tomato & Mozzarella Parcels. The recipe is below and it is easy to swap any of the ingredients for different fillings, plus if you can swap to free from ingredients for the pastry.
My next recipe is something sweet, it will power them up for the day and that is my Berry & Chocolate Chip Muffins. Again you can use free from ingredients to make these muffins and they can be frozen ahead of time.
