Day 7 National Story Telling Week

Today's book brings back lots of childhood memories and I love this book and think I pretty much had her whole collection. It's Peter Rabbit by Beatrix Potter, the illustrations and her little story books are just fabulous.

The recipe today is no other than our yummy Carrot Cake!

Ingredients for the carrot cake

  • 90g soft brown sugar

  • 100g self raising flour

  • ½ tsp bicarb of soda

  • 1 tsp of cinnamon

  • ½ lemon & Zest

  • 1 egg

  • 75ml sunflower oil

Ingredients for the Icing:

  • 25g butter

  • 40g icing sugar

  • 100g soft cheese

  1. Wash your hands and put on an apron. Ask your grown up to put the oven on at 180c

  2. Carefuly grate the carrot, you might need to ask your grown up to help and put into a large mixing bowl

  3. add the sugar, flour, bicarb of soda & cinnamon and mix together well

  4. Grate 1/2 of lemon and squeeze 1/2 the lemon for the juice, pick out any stray pips!

  5. Add this to the mixing bowl and then add the egg and oil

  6. Combine together until its all mixed in and then scoop the mixture into the prepared tin and level at the top and then ask your grown up to put it in to the oven for about 20-25 minutes until cooked. leave to cool in the tin.

  7. For the icing: put the icing sugar, butter, milk and cream cheese into a mixing bowl and cream together until smooth and fluffy.

  8. Once the cake has cooled, you can then cover the carrot cake with icing before serving.
